Pancetta, Meet Smokey Pork Ribs

NOTE: If you want some background before reading this whole post, check the first pancetta post and my ode to Kansas City ribs.

I’ve been taking on Charcutepalooza with a twist. For every monthly challenge, I add a smoked meat exercise on the side, partly for the love of the game, partly to amuse and sustain myself during the deadly long waits of curing. In an earlier post, I made Spawn-of-Satan chicken wings on the Big Green Egg while prepping my pancetta. For this post, I moved the latter from the fridge to the gallows and smoked six racks of pork ribs.

Pancetta February Part 1

A couple twists in how I’m taking on the February Charcutepalooza challenge.  I’m doing pancetta, but I’m using Ruhlman’s website recipe, which differs slightly from the book version.  I’m simultaneously making smoked chicken wings on my Big Green Egg, both to liven up this blog post and feed my fiance and her friend after they’re done painting our bedroom.
